Wild Mushroom Recipes

Following post brought over from my Blogster

With some of us now out fall mushroom gathering in the woods, I thought I would share links for recipes.

  This site is full of information and recipes and was called wild mushroom reicpes  I miss our big puffballs we would find living in Illinois. They have a recipe called puffball pizza.

Foragers Wild Food Cookbook had some great mushroom recipes too.  ,,,, following recipe from this site:
               Linguine with Chanterelles and Leeks 
From "Fields of Greens" by Annie Sommerville

pound chanterelles
1 leek, washed halved and thinly sliced
2 Tbsp unsalted butter
Salt and pepper
3 cloves garlic, minced
1/3 cup dry white wine
pound fresh linguine
2 tsp fresh thyme, chopped
Grated Parmesan cheese

Clean and trim mushrooms. Cut into thick slices. Cook pasta in boiling water. Melt butter in large saut pan, add leeks, tsp salt, and a few pinches of pepper. Cook over medium heat for 3 minutes. Add garlic and cook, covered until leeks are tender. Add mushrooms and wine. Simmer for 10 minutes. Drain cooked pasta and toss in pan with mushrooms, adding thyme. Serve with cheese to taste. Serves 2 to 4.

Wild mushrooms always seem to go well with your favorite pasta dishes. (and to make gluten free-just change up to gluten free pastas I love brown rice pastas as they don't break down) Here is one from Jamie Oliver

Do enjoy the process of gathering and preparing. But PLEASE do not gather mushrooms unless you have been taught by someone first.
