Hoping today is the last in this series of over the top heat days. they are promising storms tonight. we will see.  To be 105 degrees today with the heat index of 115 degrees.  amazing to me that each day is hotter than the next. I keep telling myself this is sooo much better that a blizzard in the winter time up north.

Here is my recipe for blue cheese dressing. It comes from a friend of over 20 years ago.

Blue Cheese Dressing

!/4  pound blue cheese-crumbled

1 cup sour cream-can use the low fat version

1 cup mayonnaise-do NOT change this to Miracle Whip-may use low fat version

1/3 cup dill pickle vinegar

1 clove garlic-minced

1/2 teaspoon Worcestershire sauce.

Put all ingredients in a bowl and blend in by hand. Store in a glass jar in the refrigerator. Will keep for several weeks.

To change this to a garlic dressing-omit the blue cheese, could add in more garlic for stronger garlic flavors

Calendula Vinegar

I love learning about using flowers and herbs, here is a good one I found in a magazine

1 cup fresh calendula petals

2 cups white vinegar

Bruise the petals and place them in a glass jar with a tight fitting lid

Heat the vinegar and pour it over the petals.  Put the lid on tight and allow to steep in a sunny window for several days.

Strain out the petals. Add a fresh whole calendula flower or two, and place back in the cleaned glass jar or pretty glass jar.

Use this combined with your favorite oil and spices. This makes a beautiful golden yellow salad dressing
