For supper tonight I made up Heidis recipe for crab cakes. I had never made them before, and we loved them. It was so hot today wanted to make something light. I served with garden veggies.
Heidi's recipe: mashed potatoes with crab meat
Leftover mashed potatoes-I didn't have left over so made up some fresh with my garden potatoes
crabmeat-fresh or canned
salt and pepper to taste, your choice of herbs for seasoning
bread crumbs-I used cornmeal for me-gluten free
mix up the mashed potates with crab meat, season and shape into patties. pat with bread crumbs, heat and brown in hot oil
Serve with garden veggies.
