Entry for July 09, 2006 and Banana-Nut Bread and poll
  I managed to spade up a big space and plant about 3 flats of snapdragons that Larry brought home the other day. A lady at a veg. stand was selling them out at 1.00 a flat so he bought 5 flats. I will give away 2 flats to a couple neighbors.

   I am posting a recipe I just got from my Mom. She says she loves this bread as it slices very nice and does not fall apart like some breads.

Banana-Nut bread

1 1/2 cups whole wheat flour-I would use my spelt flour  for me or my own ground whole   wheat flour for Larry or others 

 1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

4 medium-size bananas, mashed

1/2 cup sugar-I would change to 1/4 cup organic sugar or honey and 1/4 cup of splenda

1 large egg, lightly beaten-use free range if possible

2 tablespoon canola oil

2 teaspoon vanilla extract-I would use my own homemade extract

1/2 cup chopped walnuts, toasted

veg. cooking spray

Stir together the first 4 ingredients in a large bowl; make a well in center of the mixture

In seperate bowl stir together bananas and next 4 ingredients; add this to the flour mixture, stirring just until dry ingredients are just moistened

Gently fold in the toasted walnuts

Pour batter into a 9x5 inch loaf pan coated with cooking spray

Bake at 350 degrees for 55 minutes to 1 hour or until a toothpick tests clean.

Cool in pan on a wire rack 10 minutes, then remove from pan and cool completely on wire rack before slicing
