My Strawberry Mango Jam-low sugar

I had very over ripe fruit that needed to be used up, so made this jam.

Need 4 cups total of fruits.
Clean and slice the strawberries, cut the mango up in small pieces.
1/8 cup organic sugar
1/8 cup honey
1 teaspoon vanilla extract
1 cup liquid
3 tablespoons Ball's no sugar/low sugar pectin

Prepare the fruit and mix well with the sugar, cover and let rest in the frig overnight This method should give you lots of juice depending on the fruit.

Next day measure the liquid and add water if needed to make it equal 1 cup
Add to pan, stir in the honey and vanilla extract and bring to a boil. add the pectin in slowly and stir till well mixed.
bring back to a rolling boil that can not be stirred down If you get alot of foam add in a sliver of butter.

Have ready your water bath canner and jars and lids and rings. Follow proper canning procedures and process for 10 minutes.
