Healthy Mondays

Thought I would share a couple recipes from the Meatless Mondays site.

Ginger Beer

A refreshing, nonalcoholic drink with real kick. You may never settle for plain ole ginger ale again.
  • 2 quarts water
  • 1/2 pound fresh ginger, thinly sliced
  • 1/2 cup fresh lemon juice
  • 1 cup honey
  • Ice cubes
Combine 2 cups of the water with the ginger in a saucepan. Simmer over medium heat for 20 minutes. Stir in the lemon juice and honey. Let it cool completely. Strain the ginger mixture into a large pitcher. Add the remaining 1-1/2 quarts water. Add the ice cubes, and let stand until well chilled. Serve.

Orange Poppyseed Quick Bread

This orange-flavored quick bread is almost fat-free and very yummy!!
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 cup sugar
  • 1 tablespoon poppyseeds
  • 1 teaspoon vanilla extract
  • 1 cup orange juice
Directions
Preheat oven to 325. Spray bread pan with nonstick cooking spray.
Mix dry ingredients together in large bowl and stir in liquid ingredients until dry ingredients are moistened.
Pour evenly into bread pan and bake for 45 minutes (toothpick should come out clean).
Let cook for 10 minutes before removing from pan. Cool and slice


Spinach Blackberry Pistachio Salad

Tender baby spinach is tossed with sweet blackberries and balanced by nutty pistachios. Fresh fennel bulb adds a slight licorice aroma and balsamic vinegar brings its own tang to this satisfying salad. This recipe comes to us from Elizabeth of Sophisticated Pie.
Serves 4
  • 1/2 pound fresh baby spinach
  • 1 pint fresh blackberries
  • 1 fennel bulb, thinly sliced
  • 1/2 cup pistachios, shelled
  • Fennel fronds
  • � cup Balsamic vinegar
  • � cup extra virgin olive oil
  • Black pepper, to taste
Toss together the spinach, blackberries and sliced fennel. Sprinkle with pistachios and fennel fronds.
Drizzle with olive oil and balsamic vinegar and season well with black pepper.
