SB510 Passes

I just learned from friend Celeste that this bill just passed I did some research and found this article http://www.treehugger.com/files/2010/11/raw-milk-in-real-danger.php

There is some good news:

While SB 510 passed, the Tester/Hagen Amendment that was recently added to the bill excludes small farmers and farms making less than $500,000 annually, by allowing them to apply for exemption from FDA regulatory oversight. The inclusion of the amendment made the National Sustainable Agriculture Coalition finally lend support for SB 510.

Cookies-Got Milk??

These are both made with the basic recipe from my previous post. Top one has honey and sun crystals for the sugars and gf oatmeal, currents, dried cranberries, slivered almonds and orange extract.
Bottom one I really love, I used dark brown sugar and sun crystals for the sugars, added two big spoons of cocoa, and added peppermint, mint, and dark chocolate chips.

Chocolate Chip Drop Cookies-converted to Gluten Free

I know we all have our favorite chocolate chip cookie recipe that we have made forever. I grew up with the original toll house cookie recipe, and made that for many years.
However, getting older now and both of us having some health issues that I bake for, I have changed how I bake. I especially look for lower fat and lower sugar recipes. Most recipes just have way too much sugars in them. I have always cut back on the amount of sugar I use, and now I have cut back even more.
I also like making smaller batches of cookies at time, instead of the ones that make Lots of cookies-although when I do bake a large batch I freeze them now.
Here is the recipe I used the other day, from the Joy of Cooking 1967 edition.
Chocolate Chip Drop Cookies
about 45 2 " cookies
Preheat oven to 375 degrees f
Cream 1/2 cup butter---I creamed 1/4 cup butter with 1/4 cup lite olive oil
add gradually and beat until creamy---1/2 cup brown sugar and 1/2 cup white sugar. I used 1/2 cup sorghum and 1/4 cup sun crystals (which equals 1/2 cup white sugar-make with pure cane sugar and stevia)
beat in---1 egg and 1/2 teaspoon vanilla
Sift and stir in 1 cup and 2 tablespoons sifted all purpose flour, 1/2 teaspoon salt and 1/2 teaspoon baking soda. I used a gluten free all purpose baking flour mix with a little sorgham flour
Stir in---1/2 cup chopped nuts and 1/2 cup semi sweet chocolate chips. this is where you can add any nuts you wish, and any type of chocolate chips you wish
Drop the batter from a teaspoon, well apart, on a greased cookie sheet. bake for about 10 minutes.
I was really pleased with this recipe being converted to gluten free. the mix I used is from the gluten free pantry Mix_All_Purpose_Flour I really love this company's mixes-no bean flours, no xanthia gum, just simple things like rice flour and a couple starches.

Update on my Rug Hooking Project

Remember when I started this piece


I haven't had the time to stick with this, but is a nice "fill in" when I have a few minutes for a craft project. If I had the time right now to just really devote to this, it would be finished already-it works up pretty fast. My biggest problem is I seem to get too many loops in an area, and then it wants to bunch up on me a bit. I especially love the white stars-they come from a felted white wool sweater that cut up into strips pretty nicely.

I thought if this went well, I would design a couple hearth rugs for in front of our wood stoves. Wool does not burn, so if a spark should get on it-should put it out.

Will be another gorgeous day in the ozarks today, back up in the 60s but with high winds. Tomorrow promises warm but rain coming in. I see my bird feeders are low, so will fill them back up today. The birds just love those bird bells-they eat up all up in less than a week.

Holiday Recipe Share Fridays

Good morning all.
and those of us that celebrate Thanksgiving-what do you all do with the big dinner leftovers??
It is usually just the two of us now, we did get invited to a dinner at noon, but we decided nicer to stay home this year. I cook alot different than the average, so it makes it difficult, especially for me, being gluten free, and usually too many high fat and sugar temptations for my Larry.
I cooked up a 14 pound turkey for us-a nice size for left overs. My favorite left over is to make up a big pot of turkey stock which I either freeze for later or make up, and this year since we are in a very cold week-I think I will make up the soup today. For the rest of the meal I really don't have alot of leftovers, cause I plan the meal that way.
We enjoy the big bowl of fresh cranberries that I cook up that I add in blueberries and mandarin oranges, sometimes grapes and apples.
My turkey stock recipe
For my stock nothing too fancy. I put all the bones and skin into a big stock pot and cover with cold water. If I have it, I add some celery stalks with leaves too. Bring it up to a simmer and let simmer for 2 hours. Let it cool down-strain off, and let it sit in the frig. overnight.
This morning, I will skim off all of the fat that has floated to the top and add to the discarded bones-and since it's cold out there, I will add it to the compost pile-which I know is a big no no, but some of the wild animals out there, and my cats can have a feast too, before I turn it under into the pile.
The day after Thanksgiving, is when I dig out all my holiday and cookie recipe files and decide what I want to bake. This year I am mostly baking for just the two of us. I will bake up the fruitcakes too, which are late this year cause I needed to order in the currents-which I have now.
I also like to make up some spirits-homemade kaluha, sometimes amaretto too. This year I think I will make up some chocolates.

Carol Spiced Leftover Turkey Salad
Carol Hazelnut meringue torte with chocolate cinnamon mousse
I want to share a couple candy recipes that are from Larry's "Cuz" Patti
Walnut Turtles
2 cups walnut halves
3 tablespoons butter or Oleo
2/3 cup semisweet chocolate chips or milk chocolate chips
35 packaged carmels
1/2 teaspoon vanilla extract
1 1/2 teaspoons shortening
Cover baking sheets with waxed paper and arrange nut pieces in 28 to 30 clusters, space at least 1 inch apart.
Place unwrapped caramels in top of a double boiler, with butter and heat until caramels are completely melted. Stir occaisionally.
Drop by teaspoonfuls onto center of each walnut cluster, making sure the caramel touches all of the walnuts-to hold them together. Allow to cool.
Melt chocolate with shortening over hot but not boiling water. Spread over caramel candies and allow to set before removing from the waxed paper.
I also have Patti's family fudge recipe
Never Fail Fudge
5 cups granulated sugar
4 ounces stick Oleo
1 teaspoon salt
1 cup chopped walnuts
12 ounces semisweet chocolate chips
12 ounces milk chocolate chips or a sweet chocolate
1 large can evaporated milk
13 ounces marshmallow cream
1 teaspoon vanilla extract
Combine sugar, milk, oleo, marshmallow cream, and salt in a ver large pan-at least 4 quarts. Stir over a medium flame til everything is blended.
Bring to a boil and continut to boil for 5 minutes, do not mistake air bubbles for boiling bubbles, overcook rather than undercook. I set the timer for 6 minutes when boiling begins.
Remove from heat and stir in the chocolates and add vanilla then the nuts, making sure the chips are melted first.
Pour into 2 greased 9X9 pans
This fudge does not fail, and if you like, the recipe can be cut in half to make a 2 1/2 pound batch instead.

Baking Today

We started out pretty chilly this morning. I decided to make the cherry pies, and make cookies first.
For the cookie recipe I wanted one that did not use alot of fat in the recipe. In an older version of the Joy of Cooking book I have, I found a chocolate chip lower fat recipe. It used 1/2 cup of butter and 1 cup of sugar, it also did not make lots of cookies. The recipe said around 45 cookies and I got exactly that-lol Which filled a small cookie jar, and I froze a quart baggie full too.
I used 1/4 cup of butter and 1/4 cup of oil. I used 1/2 cup of agave and sorgham combined, and for the other half cup I used splenda (cause Larry is diabetic) You could also just use 1/2 cup of brown sugar and 1/2 cup of white sugar as called for in the recipe.
For the flour I used The Gluten Free Pantry's all purpose mix, and since I had the sorgham in there-more liquid-I added in sorgham flour to get the dough thicker. I put in white chocolate chips, and mint chips, and dark chocolate chips, and about 1/4 cup of finely chopped english walnuts They came out of the oven-perfect-I wanted the cookies soft and melt in your mouth-and that's what I got-lol

On to the pies. by now I had taken Nikita for our walk, and actually the cherries had thawed out a bit too much by now, cause I had lots and lots of juice.
I made the first one for our friend, the crust was perfect, but I am making it in one of those disposable pie pans so not to worry about getting my pan back-and these are not deep at all. Soooo cramming as many cherries as I could-I made a mess-with it spilling out all over. I put it on a rack that was on a cookie sheet with parchment paper to bake. It looks good though, and hope it sets up ok.
On to mine-I had forgotton how much more challening it is to make gluten free pie crust. I have been "cheating" in the past by using spelt flour, which is kinda like a fine whole wheat pastry flour, (does not have alot of gluten in it, and I usually can handle it) but I am getting into trouble now by using spelt as my main flour. Sooo I experimented today using the rest of the Gluten Free Pantrys all purpose mix, and going by their pie crust recipe on their site. I didn't let it chill long enough cause I just wanted to get the pie in the oven-so I had a really difficult time getting the crust rolled out and into the pan-without the crust totally falling apart on me.
Their all purpose mix and their pie crust mix are just a little different too. I had a little of this dough left and cherry juice with the instant tapioca in it-so I decided to pat the dough into a disposable pie pan, add the juice mixture that was left, I cut up an apple and put that in there-and have it baking too-I can taste test my gluten free pie crust this way too-lol
So, this project definately took way too long, I usually can whip these pies up fast-lol
I just checked the turkey that has been in the frig since monday morning-and it is definately not thawed out-so that will get set in the roaster pan with cold water over night tonight.
Guess I need to decide "what's for supper??"

My Sunday Doings

I don't think I have lived in a place with such drastic weather changes since back in the 70s when I lived in Denver. We have worked our way back up to the mid 70s today with lots of wind.
A little too hot to be hunting today, so the guys went out fishing for white bass and cats this morning. I kept telling them it is super windy out there, but I guess they will be fishing in some coves where the wind shouldn't be too bad. A fun day out for the guys.
Tomorrow we have a chance of rain-we are still in need of a really good soaking, which we may finally get this coming week. Temps will start dropping tomorrow and be a high in the 30s on Thanksgiving day, with 20s the night before-these extremes in weather play havoc with my asthma and allergies-lol Although I am definately not complaining about our gorgeous warmer than usual days this November.
I can't believe it but my freezers are full-almost full to the top. One of the guys last weekend brought a huge ham-so big it filled a whole half of one refrigerator shelf. So yesterday, I had Larry cut a small end off-enough for 5 of us-which I served last night, and the rest of the spiral ham I packaged up into soup bones, and an end ham-big enough for 4 or more, and many small packages for meal size for two of us-what a blessing-enough ham for the coming year.
Since it is warm today, I need to go out to one of my out buildings and bring up some more pint canning jars. When we get our deer-alot of it will be canned. We enjoyed the venison hams that Mr. L made for us in his smoker-that I definately want to freeze some of those for us, and then make up some sausage, and can some venison too. I need to get the jars up to the house-so I can get them washed and ready to go. No fun trying to get to them once it turns cold.
I am not sure what I want to do today, I didn't find either of my teams on the tv-so no football to watch. I may go thru my big folder of holiday foods and decide what few things I want to bake for us this year.
I decided not to make lots of goody bags like I usually do for the neighbors. Instead a few friends will get some of my homemade soaps, I will still make up something to take to our little post office though. I know they enjoy it-cause they always thank me several times.
That's a little gripe of mine. Has the new generation forgotton how to say thank you?
I know giving is to be out of love and not expect anything in return, but I was really hurt last year with mostly no thank yous-for all the home baked goodies I gave out. So this year, I told Larry I was not going to do that this year. If I don't get any thank yous-than I will assume they didn't like the cookies and candies.
I need to get off here for a bit, and take Nikita for our walk, and re fill the bird feeders too. We also didn't see my kitty Autumn all day yesterday, so going to see if he is around today. Hoping he didn't go wandering into danger.

Slow Cooker Herb Bread-from All About Thyme

Homemade Bread Day. Bet you'd like to come home to a fresh-baked loaf of bread, wouldn't you? Here's an easy way to manage this, even if you don't have a bread machine. Use your slow cooker instead

Susan's Easy Slow-Cooker Herb Bread

Baked in your slow-cooker, this crisp-crust oat-and-wheat herb bread is moist and good-tasting. Great for summertime cooking or anytime you don't want to heat the oven. This recipe makes one small loaf.

  • 1 tblsp yeast
  • � cup warm water
  • � cup warm milk
  • 1/3 cup quick-cooking oats
  • 1� tblsp olive oil
  • 1� tblsp honey
  • 1 egg
  • 1/8 cup wheat germ
  • 2 tsp fresh or dried minced rosemary
  • 2 tsp minced fresh parsley
  • 1 tsp dried thyme
  • 1 tsp salt (optional)
  • 2 cups wheat flour, plus up to additional 1/3 cup

Turn on the slow cooker to high. Place a trivet (try a couple of fruit-jar rings or crumpled aluminum foil) in the bottom. Add 1 cup water.

Grease a deep bowl or other container that will fit your cooker. I use one of those 9"x5" disposable aluminum foil bread pans.

Dissolve yeast in warm water. Combine with warm milk, oats, oil, honey, egg, wheat germ, herbs, and salt (if desired). Stir in 2 cups flour, a cup at a time. Turn the soft dough out onto a floured board and knead, adding more flour as necessary, until the dough is soft and elastic. Shape to fit your cooking container.

The herbs are a suggestion; use your own favorite savory combinations.

Place dough in the cooking container and arrange on the trivet. Make a tent of aluminum foil and place loosely over the dough (this keeps moisture from dripping off the lid and into the dough). Bake on high for 3� hours (no peeking until the end!), or until a toothpick tester inserted into the center of the loaf comes out clean.

My 10 Burner Wolf

I had a couple requests to share a photo of my Wolf.

Probably 20 years or so ago now, Larry found for me in an ad paper-my dream stove and ovens. It was almost brand new, and sitting in someone's garage. She said she now only used it for holiday baking. She had started a gourmet restaurant business, and after a year with her business doing very well, her landlord really increased her rent-so she said forget it. I hate to hear stories like that.

She had it for sale for $500.00. We had gotton the original receipt with the instruction booklet, and she had paid $5,000.00 for it plus a trade in. I was looking for a 6 burner, but we couldn't pass this one up at this price. When Larry called her about it, she said she had someone coming to look at it that night. Larry said I am coming right now with cash. She wasn't sure about letting Larry come to see it before this first caller, but Larry went any way. It was about an hour drive away, he hooked up the trailor-and came back with my stove.

When I came home from work that day; it was sitting in the middle of the kitchen floor-very exciting day for me. I am still amazed of the very cool useful items Larry has picked up for me this way, or at garage sales.

This one is a restaurant stove, so when ever we have to buy parts for it, we have to tell them we are a business-shhhhh. One of the things I love about this stove are the heavy grates. They can handle all the heavy canners I want to use on it, plus all my cast iron. I pretty much only cook in cast iron pieces or those French pots you see. The pot filler was a house warming gift from one of our Illinois friends. It comes in handy filling up the big water bath canner.

The other thing I love about this stove; the ovens are brick lined-so everything bakes perfectly. I have so blessed with this stove-I just love using it.

Sharing Holiday Recipes??

Last year we shared our favorite holiday recipes from Thanksgiving thru New Years Eve. Any one interested in doing this again?? Thought of posting on fridays-unless any of you have a better day that you would like to post. Just leave me a comment.

This is any holiday dish you would like to share, and/or your favorite desserts and baked goodies.

My Doings

Another 70 plus day again here in the ozarks, full sun, high winds though--and we are still in a fire warning. So no outside burning, and no taking the ash bucket to the compost pile for awhile.

I just heard on the news there was a big fire over at Ft Leonard Wood not too far from me. Hoping the rains come tomorrow as forecast.

We moved the desk and computer out of the middle of the living room and into Larrys room. Wow! it was like gaining a whole new room-that will be wonderful once we get around to remodeling the living room. I love it. and the computer still sits in front of a window but just a little different view.

Back to cleaning today-I am up to the kitchen-got half done yesterday. Will be tackling my Wolf 10 burner stove-it got quite a work out this summer, with all the canning I did.

Oh, and we tried those plums I canned for supper last nite-yummy!! And those pickled bing cherries I put up, are a huge winner. I only canned one small batch to see if we would like them, and only have one jar left now. I think I only had about 4 or 5 1/2 pints. We shared them with Mr. L one afternoon and he couldn't stop eating them. lol He kept apologizing for eating them, and I said no no, food is to be enjoyed. So that recipe is a keeper.

I ended up deleting several contacts yesterday. One I deleted cause every single day she was complaining about something, hadn't read anything positive for months-so enough is enough. and another contact I deleted cause every single day she was either selling something-which is what the market place is for, I know I sell on occaision too but not every single week, and cause her posts are only about negative news articles, nothing informative to me or positive. So decided enough is enough. I don't keep negative people around me any more. It is ok to complain once in awhile-this is only "human", but not every day for months-lol So several months ago I had over 100 contacts and now I am down to under 80. Some people don't blog at all here any more, and haven't visited for a couple years now-so deleting those too. House cleaning-again lol

I am off to do laundry before the rains come (have to unplug my machines) and to hopefully get the whole kitchen finished up. Then I am up to quicker stuff and then lastly will scrub all the floors. Plan is to have thursday or friday free, so I can bake some pies and relax a bit before all of our friends arrive.

My Bread

I just love this bread, probably cause I really have not eaten any bread for over 10 years, but this one is just soooo good.

I don't have the right pan for this, so I decided to bake it on a pizza stone. I knew it would really spread out, but it is crunchy on the bottom and the egg wash made the top beautiful too. Amazing to me, that this gluten free bread, tastes just like regular french bread.

Doings in My Woods

I guess I have been pretty tied up with stuff, and didn't realize I hadn't posted as often as I usually do.

Alot of times when I am working in the house, I use my blogging-reading and posting-as my breaks. But lately, I have been working alot outside.

We did finally get rain this week, at least an inch, also several mornings with very heavy dew. Our winter wheat is already sprouting in our newly planted wildlife food plot. I was really surprised by that, cause there was absolutely no moisture in the soil at all when we planted.

This is wood splitting, and hauling, and stacking time again. We did alot of wood last year, if we don't have another severe cold winter like last year, we should have enough wood split and stacked already. This is a good time to work on the wood; cooler temps, less bugs too. Larry is still cutting up alot of trees that were from the food plot, or just outside of it; so we are splitting those. Today we finished filling his dump truck, so I will be stacking that up in the rows- a little bit at a time. Have to say this is great exercise, and good for my bones too. I work a little at a time, in hopes to not get down with my back, and still get good physical exercise.

My philosophy has always been: if you don't use it-you will lose it, so I do this physical stuff to keep limber and moving.

I really need to get on the ball and clean house before the 13th, but I just can not get "into it" this year at all-and time is running out fast-lol Hopefully this weekend I can get serious about it, and get alot accomplished.

My broken toe can finally fit into a shoe, but it will take a long time yet, before it is back to normal. It is still black and blue looking. I did this a few years ago-and it just took forever to totally heal.

Yesterday, I went with my friend to our favorite resale shops. We dropped off a box of things to sell in one, like we try to do thru out the year. I was able to find two beautiful 100% new wool jackets. Gorgeous colors too, one in a green, and one kinda Burgundy-will be great for my craft projects-applique, or rug hooking.

In our other favorite store, I picked up two fabulous cotton shirts in xxl for my quilts. they are tommy hilfiger brand and one has fish all over it, and the other one has flys for fly fishing, Sandy found these on the rack. I also picked up for $2.00 a pendelton xlarge sweater-just gorgeous. It fits perfect over a sweatshirt, and kept me nice and warm outside today while working with the wood. When I get tired of it, I can shrink it and use it for appliques, or quilt squares. lol I just love it when I find deals like that.

We have a cold front moving in today and tomorrow. Some say we will be in the 20s tonight, others say 30s, either way with the wind-it will be cold. I just started a fire in living room wood stove-first one for the season. I will be a cold morning going to the dentist tomorrow-my 6 month visit.

For supper tonight, I have a big pot of chili going, and I am making up that french bread-gluten free from a mix-that I just loved. That's in the oven now. It's a mix from Gluten Free Pantry out of Canada-I love their products so far that I have tried-all rice base and no xanthia gum. I like to mix up the grains I use for the gluten free things I make.

Election Day cake is an American institution.

The tradition dates from the 1600s, but the cakes became more elaborate after colonial independence. Weeklong celebrations often accompanied certifying the election results, and women baked these yeast cakes for out-town-guests.

This recipe is adapted from Lydia Maria Child's recipe for Election Cake, which appears in the 1833 edition of The American Frugal Housewife, published in Boston. We have reduced Mrs. Child's recipe by three-fourths and added a little spice, which was, and is, typical in election cake, though Mrs. Child omits it.

Yield: 24 pieces

  • 1/4 cup lukewarm water
  • 2 packages dry yeast
  • 3/4 cup whole milk, heated to lukewarm
  • 3 cups all-purpose flour, plus more for kneading and forming
  • 6 tablespoons unsalted butter, melted and cooled
  • 1 large egg, at room temperature
  • 1/2 cup sugar
  • 1 teaspoon ground or freshly grated nutmeg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 cup currants

1. Pour the water into a 4- or 5-quart mixing bowl. Sprinkle the yeast over the top, and set aside until the yeast dissolves, about 3 minutes. Stir in the warm milk, then beat in 1-1/2 cups of the flour, making a stiff batter. Cover the bowl with plastic wrap and set aside in a warm place for 30 minutes (no longer).

2. Beat in the butter, egg, sugar, spices, and salt. Then work in the remaining 1-1/2 cups flour, making a soft, rough dough. Cover the bowl with plastic wrap and set aside for 15 to 30 minutes.

3. Knead the dough until smooth, for 5 to 10 minutes. It will be very soft and sticky. Gradually add more flour as necessary, a few tablespoons at a time, to form a smooth dough.

4. Knead in the currants. Roll the dough into an 8-inch log. Cut the log into 4 equal pieces, then divide each piece into 6 little rolls. To create surface tension so the rolls will puff up round, roll each into a little ball. One at a time, pinch 1 side of the ball with your fingers as though stretching loose skin, then tuck the stretched dough into a pucker at the bottom of the ball. Do this several times until the surface looks taut. Dredge the rolls in flour and arrange pucker-side down in a greased 9x13x2-inch baking pan, 4 rows across, 6 rows down. Loosely drape with plastic wrap and let rise in a warm place until generously doubled, 1-1/2 to 2 hours. The rolls should all be touching.

5. Set a rack in the lower-middle level of the oven. Heat the oven to 375 degrees F. Bake the cake until all the rolls are puffed and richly browned, and those in the center register at least 190 degrees F on an instant-read thermometer, about 20 minutes. Let the cake rest in the pan for 3 minutes, then gently shake the pan back and forth until the cake loosens. Invert the cake onto a cookie sheet, then reinvert it onto a rack. Serve warm or at room temperature, preferably on the day of baking.
