Refrigerator Pickles

This week one of my friends from Wisconsin said she wanted to make a batch of pickles for her boyfriend but wanted it to be easy, has a small kitchen and could I help.

I started to explain the water bath canner to her, then I got to thinking she wanted simple-I got it refrigerator pickles!

I usually make up a half gallon of refrigerator jalapenos that last up to a year, so I thought why not other pickles too? Doing a google search there are lots of recipes out there.

Here is as simple as it gets from Alton Brown of Food Network-a video showing how to make a batch. http://www.foodnetwork.com/videos/in-a-pickle/44250.html

So if you are a little afraid to jump into canning, or don't want to can up a big batch, but have a surplus of cucumbers and onions-try a batch of refrigerator pickles-Enjoy!
