More of my Cookbooks

Most of my books I previously listed are sold, will update those tomorrow. While I am waiting for the last of the fruitcakes to come out of the oven-will list a few more books.

Mexican Cooking by Ruth Kershner and Josette Koch 1978, hard cover, good looking recipes couldn't find a photo on this one either, this is a thin book 78 pages, jacket cover has one tear asking $5.00

Trader Vic's Pacific Island Cookbook, hardcover 1968, paper jacket worn from age, book in very good condition. I have had this book forever- can see here asking $5.00

A few of my Cookbooks so far

There is a bookshop that sells used books but she gives you credit not money. I have sold on ebay and not real crazy about their fees there any more, so I thought I would list a few here first.

To save time from taking alot of photos I will direct you to the book online. Now one of my books so far was worth alot of money according to amazon's used book sellers, and I found one on ebay for a similiar price-so ya just never know what is out of print now and still in demand-but then to find a buyer is hard too sometimes.

This is large hardback and is a gorgeous book, due to the age some yellowing on the pages but in excellent condition. has a small tear on the paper jacket cover. can be seen here asking $100.00

Vegan Nutrition: Pure and Simple by Michael Klaper M.D. soft cover this the 3rd printing 1987 seen here mine is like new asking $12.00

The Complete Asian Cookbook by Charmaine Solomon this is a thick hard cover revised edition 1992 seen here this edition is out of print mine is like new, a small crease in paper jacket asking $25.00

Italian Regional Cooking by Ada Boni this is an over sized large hard cover first edition 1969, I have had this book a long time-in very good condition but the paper jacket is dirty and a couple very small tears, pages starting to yellow but otherwise a gorgeous book. seen here asking $10.00

Yamuna's Table by Yamuna Devi this is a first printing 1992 hardcover book, like new, when I bought this book it had a magic marker line on the outside bottom of pages-never noticed this til I had it for awhile, does not effect inside pages. seen here asking $10.00

Pasta Presto by Norman Kolpas this is a small paper back, like new1988 first printing. a very nice little book seen here asking $4.00

Turn It Up! by Janet Hazen another very nice paper back book, like new 1995 first edtion copy seen here asking $4.00

Art Sundays---Raggedy Ann and Andy

I didn't know what I wanted to blog about this art sunday, I have a few moments this morning as our friend is still here but Larry and he went out for a bit this morning.

Raggedy Ann and Andy popped into my head. One of my favorites from childhood. My grandma made me a set of dolls which I still have, back in the 70s I knew an artist that painted all sorts of subjects in watercolors and one year she did a painting of Raggedy Ann and Andy which I ended up purchasing. When I retired from my job of 25 years-my main gift was of a teapot and cups of these favorites of mine. So I just really love them.

Soooo, I thought I would see if I could find any other artists that painted these. I would share a photo of my piece but it is not where I can get to it now.

Happy Thanksgiving

Thanksgiving 1 Pictures, Images and Photos

Pies Completed

Four pies made raisin pie, apple pie, pumpkin pie, gluten free pumpkin pie-our guests have 4 little dogs that are their "kids", so I put a little scottie on that pumpkin pie, and on mine a put a turkey in the middle. You can blow up all these photos to large size as well

All the laundry caught up too and finished.

To do list: run the vacum, put clean rugs down, set the table, get organized for tomorrow, pray the turkey is defrosted-lol My neighbor works at wal mart and they are having a sale .40 a pound for turkeys til christmas-she picked me up a 24 pound one-wow! I haven't cooked that a big a one in many years-lol. I got it yesterday late-so I have been soaking him in cold water.

It's Chicken Tuesdays-Rotisserie Chicken

I have actually never made one of these, but my friend Sandy bought a home appliance recently that makes this-and she just loves it.

You all now by now, probably, that one of my favorite chefs (besides our Sea Nymph) is Bobby FLay soooo I found a recipe by him

Ingredients

  • 2 (3 to 4 pound) whole chickens, rinsed and trimmed of excess fat
  • Olive oil, for brushing chickens
  • Salt and freshly ground pepper
  • Special Equipment: rotisserie rod



Directions

Preheat the grill to medium-high. Brush the chickens with oil and season the outside and cavities with salt and pepper. Skewer the chickens onto the rotisserie rod and grill, on the rotisserie, for 30 to 35 minutes, or until the chicken is golden brown and just cooked through. Remove from grill and let rest for 10 minutes before serving.

Here is to a Busy Week Ahead for Alot of Us

Layoffs (political blog)

As the CEO of this organization, I have resigned myself to the fact that
Barrack Obama is our President and that our taxes and government fees will
increase in a BIG way. To compensate for these increases, our prices would
have to increase by about 10%. But since we cannot increase our prices right
now due to the dismal state of the economy, we will have to lay off 18 of
our employees instead. This has really been bothering me, since I believe we
are family here and I didn't know how to choose who would have to go. So,
this is wha I did. I walked through our parking lots and found eighteen
'Obama' bumper stickers on our employees' cars and have decided these folks
will be the ones to let go. I can't think of a more fair way to approach
this problem. They voted for change, I gave it to them. I will see the rest
of you at the annual company picnic

What Do you Collect?

I finally got this posted-lol-Larry has a "bug" to go thru the rest of our boxes that are in the house-He wants to see what we have left to uncover-and clear the hallway so he can work on the walls, ceiling, and tile.

We uncovered so more of my pottery after I took these photos, found my better dishes and then discovered I am missing my box of good china from Japan-sigh we either lost it somehow on one of moving trips down, and we will discover it somewhere on the property-so good thoughts please that I find it someday

I am now to figure out something for supper, good thing-we went thru LOTS of boxes, and I repacked the better stuff in boxes that will fit safely under our bed til we get cabinets. have my pottery out in plain view again, and we are down now to lots of boxes of clothes, coats, and stuff like that-yeh!! Progress being made.

Holiday Recipe Share Fridays

Winnie-the-Pooh Thanksgiving Pictures, Images and Photos

I thought I would share a few of my favorite pie recipes for Thanksgiving and/or the upcoming holidays

Bessie's Pumpkin Pie (this comes from my Grandma Jones recipe box)

1 cup pumpkin

3 tablespoons flour

1 egg

1 cup brown sugar

1/4 teaspoon cloves

1/3 teaspoon allspice

1/3 teaspoon cinnamon

1/4 teaspoon ginger

1/4 teaspoon salt-optional

1 cup milk

1/e cup milnot

1 unbaked pie shell

Blend everything together well and then pour into the unbaked pie shell.

Bake at 425 degrees f for 15 minutes, then 350 degrees for 30 minutes Test done with a tooth pick. cool. enjoy!

Cranberry Blueberry Pie

I got this recipe from my mom, and is a winner! Always bake this up when the blueberrys are fresh, and then for the holidays too.

1/2 cup sugar or sugar substitute

dash of salt

2 cups blueberries-fresh or thawed frozen

1/2 teaspoon almond extract

1/4 cup flour

2 cups cranberries-fresh or thawed frozen

1/2 cup water

1 unbaked pie shell and top or pastry for lattice crust

In saucepan combine sugar, flour, salt and mix well. Add the cranberries. Simmer gently until the skins pop, about 5 minutes. Stir constantly, gently, Remove from heat and stir in the blueberries and almond extract with large spoon. Pour into unbaked pastry lined pan, cover and bake 425 degrees f 30 to 40 minutes-or til bubbles thru.

Raisin Pie one of my Grandma Jones favorite pies to make

1 cup seeded and washed raisins

2 cups water

1/2 cup sugar

4 tablespoons flour

1 beaten egg

1 lemon-juiced

2 teaspoons lemon rind grated

pinch of salt

Soak raisins for 3 hours. Mix the sugar, flour, egg together, then add the seasonings, raisins, and liquid. Cook over hot water for 15 minutes, stirring occasionally. Cool mixture then empty into pie line pan. Cover pie with narrow strips of dough-criss crossed. Bake 350 degrees f until brown.

I think I will surprise my Larry with this pie for Thanksgiving this year-it is his one of his most favorite pies-but haven't made it for me do him being diabetic.

Following is a nice salad for the holidays I haven't made this in awhile either

Apple Slaw

1 pound red cabbage

3 apples peeled cored and shredded

1/2 cup french salad dressing

1 tablespoon minced shallots

3/4 crushed caraway seeds-sometimes I leave this out

1/2 teaspoon salt

adjust seasonings for taste

Finely shred the cabbage and the apples. Combine in a bowl and toss with the French Dressing and remainder of ingredients. Let stand for at least 4 hours-adjust the taste

New Gluten-Free Bread Recipe that Rocks!

My Delicious Gluten-Free Bread Recipe

Most gluten-free bread recipes rely on eggs for texture and rise. Not this one. This gluten-free bread is tender, crusty, vegan, dairy-free, rice-free, and egg-free. I baked it in my Breadman bread machine.

First- whisk together your dry ingredients and set aside:

1 cup sorghum flour
1 cup potato starch
1/2 cup millet flour
2 teaspoons xanthan gum
1/ 1/4 teaspoons fine sea salt
1 tablespoon rapid dry yeast

You'll need sesame seeds for the top; set aside for later. Or omit.

Pour the liquid ingredients into the bread machine pan:

1 1/4 to 1 1/3 cup warm water (at 110 to 115 degrees F)
3-4 tablespoons extra virgin olive oil
2 tablespoons honey- or raw agave nectar to keep it vegan
1/2 teaspoon mild rice or white wine cider vinegar (or lemon juice)
1 tablespoon Ener-G Egg Replacer whisked with 4 tablespoons warm water till frothy

Gently pour the mixed dry ingredients on top of the liquid.

Set your bread machine program for 1.5 loaf medium crust. I used the gluten-free cycle on the Breadman; if you don't have a gluten-free cycle, I believe a rapid rise cycle will also work.

Check the dough after a few minutes of kneading- it should be closer to a muffin batter than bread dough, soft but not too wet. Adjust dry to wet ratio with a tablespoon of flour or warm liquid, as needed. Humidity influences the dough. As does temperature (your bread will rise higher on a hot day).

If you like a crusty loaf, remove the bread from the pan and place it in the oven at 350 degrees F for an additional 10 minutes- keep an eye on it and don't let it get too brown. It should be a light golden color.

Carol Mum's Christmas Cake

Welcome to our first post for this event. This will continue for each friday thru New Year's Day, so you are all welcome to share and swap your favorite holiday recipes.

With Thanksgiving coming up soon, I thought I would share a couple favorites of mine.

Growing up as a child we always went to Grandma and Grandpa's farm (my Mom's parents) Grandma prepared the feast always, and we helped her to clean up the dishes and such afterwards. Grandma always put out her best silver and china and made everything from scratch.

I don't remember any particular dish, except for her jello salads, bean salad was always one of her dishes, she always had lots of different pies made, rolls made, the turkey and dressing, veggies, mashed potatoes and gravey. Always "good eats"

Bean Salad-Grandma Jones

1 can onions

1 can red beans

1 can yellow beans

1 onion sliced in rings

1 fresh red bell pepper cut in strips

3/4 cup sugar

1/2 cup salad oil

1/2 cup vinegar

dash salt and dash pepper

In a large bowl, stir together all the beans, onions, and bell pepper. In a seperate bowl mix together sugar, oil, vinegar, salt and pepper. Pour over the beans and stir well. Chill overnite.

Golden Glow Salad by Grandma Jones

1 package orange or lemon jello

1/2 teaspoon salt

1 cup boiling water

1 cup shredded carrots

1/2 cup drained crushed pineapple

1 cup cold water or pineapple juice

Dissolve jello and salt in boiling water. Add the cold water or juice. Chill. When starts to thicken add the carrots and pineapple and allow to set in one large mold or indivual molds. Serve with dressing or not.

Grandma always made individual molds, and them placed them on salad plates with lettuce leaves. The dressing she used was:

fresh cream, sugar and vinegar. Take the fresh cream in a bowl and add sugar and vinegar to taste. (this was always her own cream, since they milked several cows)

Cranberries-Kathy's

1 pound fresh whole cranberries

1 can whole berry sauce

chopped nuts or diced celery optional

mandarin oranges optional or

diced apples optional or

fresh blueberries optional

In a saucepan cook whole cranberries in just a little bit of water, stir often, cook only til they start to pop.

Take off the heat and stir in the can of whole cranberries til well blended. Fold this til mixed well, but don't crush the cranberries. Add in some nuts or celery if you wish. I also love to add a small can of drained mandarin oranges, and/or a cup of fresh blueberries. Diced apple is nice too. Chill overnite.

This is a real favorite of ours.

Over the years I used to make alot of homemade breads and rolls. I got away from it when we were working so many hours, and when I learned I couldn't eat wheat or gluten I stopped making alot of breads. I really miss that, so I may start up again and experiment with perfecting gluten free breads soon.

Sharing an email I got-letter by a concerned American

The following letter read on Glenn Beck's show, is rapidly circulating around the country. Americans everywhere identify with this 53-year-old woman. She has given us a voice. Once you read this, you will want to forward it to all of your friends...

GLENN BECK: I got a letter from a woman in Arizona . She writes an open letter to our nation's leadership:


"I am a home grown American citizen, 53, registered Democrat all my life. Before the last presidential election I registered as a Republican because I no longer felt the Democratic Party represents my views or works to pursue issues important to me. Now I no longer feel the Republican Party represents my views or works to pursue issues important to me. The fact is I no longer feel any political party or representative in Washington represents my views or works to pursue the issues important to me. Instead, we are burdened with Congressional Dukes and Duchesses who think they know better than the citizens they are supposed to represent.
There must be someone. Please tell me who you are. Please stand up and tell me that you are there and that you're willing to fight for our Constitution as it was written. Please stand up now.
You might ask yourself what my views and issues are that I would feel so horribly disenfranchised by both major political parties. What kind of nut-job am I? Well, these briefly are the views and issues for which I seek representation:

One, illegal immigration. I want you to stop coddling illegal immigrants and secure our borders. Close the underground tunnels. Stop the violence and the trafficking in drugs and people. No amnesty, not again. Been there, done that, no resolution. P.S., I'm not a racist. This is not to be confused with legal immigration.


Two, the STIMULUS bill. I want it repealed and I want no further funding supplied to it. We told you No, but you did it anyway. I want the remaining unfunded 95% repealed. Freeze, repeal.


Three: Czars. I want the circumvention of our constitutional checks and balances stopped immediately. Fire the czars. No more czars. Government officials answer to the process, not to the president. Stop trampling on our Constitution, and honor it.


Four, cap and trade. The debate on global warming is not over. There are many conflicting opinions and it is too soon for this radical legislation. Quit throwing our nation into politically-correct quicksand.


Five, universal healthcare. I will not be rushed into another expensive decision that will burden me, my children, and grandchildren. Don't you dare try to pass this in the middle of the night without even reading it. Slow down! Fix only what is broken -- we have the best health care system in the world -- and test any new program in one or two states first.


Six, growing government control. I want states rights and sovereignty fully restored. I want less government in my life, not more. More is not better! Shrink it down. Mind your own business. You have enough to take care of with your real [Constitutional] obligations. Why don't you start there.


Seven, ACORN. I do not want ACORN and its affiliates in charge of our 2010 census. I want them investigated. I also do not want mandatory escrow fees contributed to them every time on every real estate deal that closes -- how did they pull that one off? Stop the funding to ACORN and its affiliates pending impartial audits and investigations. I do not trust them with taking the census with our taxpayer money. I don't trust them with any of our taxpayer money. Face up to the allegations against them and get it resolved before taxpayers get any more involved with them. If it walks like a duck and talks like a duck, hello. Stop protecting your political buddies. You work for us, the people. Investigate.


Eight, redistribution of wealth. No, no, no. I work for my money. It is mine. I have always worked for people with more money than I have because they gave me jobs -- and that is the only redistribution of wealth that I will support. I never got a job from a poor person! Why do you want me to hate my employers? And what do you have against shareholders making a profit?


Nine, charitable contributions. Although I never got a job from a poor person, I have helped many in need. Charity belongs in our local communities, where we know our needs best and can use our local talent and our local resources. Butt out, please. We want to do it ourselves.


Ten, corporate bailouts. Knock it off. Every company must sink or swim like the rest of us. If there are hard times ahead, we'll be better off just getting into it and letting the strong survive. Quick and painful. (Have you ever ripped off a Band-Aid?) We will pull together. Great things happen in America under great hardship. Give us the chance to innovate. We cannot disappoint you more than you have disappointed us.


Eleven, transparency and accountability. How about it? No, really, how about it? Let's have it. Let's say we give the buzzwords a rest and have some straight honest talk. Please stop trying to manipulate and appease me with clever wording. I am not the idiot you obviously take me for. Stop sneaking around and meeting in back rooms making deals with your friends. It will only be a prelude to your criminal investigation. Stop hiding things from me.


Twelve, unprecedented quick spending. Stop it now.
Take a breath. Listen to the people. Slow down and get some input from nonpoliticians and experts on the subject. Stop making everything an emergency. Stop speed-reading our bills into law. I am not an activist. I am not a community organizer. Nor am I a terrorist, a militant or a violent person. I am a parent and a grandparent. I work. I'm busy. I am busy, and I am tired. I thought we elected competent people to take care of the business of government so that we could work, raise our families, pay our bills, have a little recreation, complain about taxes, endure our hardships, pursue our personal goals, cut our lawn, wash our cars on the weekends and be responsible contributing members of society and teach our children to be the same all while living in the home of the free and land of the brave.


I entrusted you with upholding the Constitution. I believed in the checks and balances to keep from getting far off course. What happened? You are very far off course. Do you really think I find humor in the hiring of a speed reader to unintelligently ramble all through a bill that you signed into law without knowing what it contained? I do not.
It is a mockery of the responsibility I have entrusted to you. It is a slap in the face. I am not laughing at your arrogance. Why is it that I feel as if you would not trust me to make a single decision about my own life and how I would live it but you should expect that I should trust you with the debt that you have laid on all of us and our children. We did not want the TARP bill. We said no. We would repeal it if we could. I am sure that we still cannot. There is needless urgency and recklessness in all of your recent spending of our tax dollars.


From my perspective, it seems that all of you have gone insane. I also know that I am far from alone in these feelings. Do you honestly feel that your current pursuits have merit to patriotic Americans? We want it to stop. We want to put the brakes on everything that is being rushed by us and forced upon us. We want our voice back. You have forced us to put our lives on hold to straighten out the mess that you are making. We will have to give up our vacations, our time spent with our children, any relaxation time we may have had and money we cannot afford to spend on bringing our concerns to Washington . Our president often knows all the right buzzwords like unsustainable. Well, no kidding. How many tens of thousands of dollars did the focus group cost to come up with that word? We don't want your overpriced words. Stop treating us like we're morons.


We want all of you to stop focusing on your reelection and do the job we want done, not the job you want done or the job your party wants done. You work for us and at this rate I guarantee you not for long because we are coming. We will be heard and we will be represented.. You think we're so busy with our lives that we will never come for you? We are the formerly silent majority, all of us who quietly work, pay taxes, obey the law, vote, save money, keep our noses to the grindstone... and we are now looking at you.
You have awakened us, the patriotic freedom spirit so strong and so powerful that it had been sleeping too long. You have pushed us too far. Our numbers are great. They may surprise you. For every one of us who will be there, there will be hundreds more that could not come. Unlike you, we have their trust. We will represent them honestly, rest assured. They will be at the polls on voting day to usher you out of office.
We have cancelled vacations. We will use our last few dollars saved. We will find the representation among us and a grassroots campaign will flourish. We didn't ask for this fight. But the gloves are coming off. We do not come in violence, but we are angry. You will represent us or you will be replaced with someone who will. There are candidates among us who will rise like a Phoenix from the ashes that you have made of our constitution.


Democrat, Republican, independent, libertarian. Understand this. We don't care. Political parties are meaningless to us Patriotic Americans are willing to do right by us and our Constitution, and that is all that matters to us now. We are going to fire all of you who abuse power and seek more. It is not your power. It is ours and we want it back. We entrusted you with it and you abused it. You are dishonorable. You are dishonest. As Americans we are ashamed of you. You have brought shame to us. If you are not representing the wants and needs of your constituency loudly and consistently, in spite of the objections of your party, you will be fired. Did you hear? We no longer care about your political parties. You need to be loyal to us, not to them.. Because we will get you fired and they will not save you.
If you do or can represent me, my issues, my views, please stand up. Make your identity known. You need to make some noise about it. Speak up. I need to know who you are. If you do not speak up, you will be herded out with the rest of the sheep and we will replace the whole damn congress if need be one by one. We are coming. Are we coming for you? Who do you represent? What do you represent? Listen. Because we are coming. We the people are coming."

Hump Day Handmade-How to Make a Poncho

Colder weather is approaching soon, making a poncho is a fun project and you will have a warm piece of clothing when you are finished.

These can be sewn with fabric, woven on a loom, knitted, or crocheted.

Chicken Smoking Tips

The first and most important tip for creating juicy smoked chicken it to brine it before it's smoked. All types of poultry benefit greatly from brining. Simply soak the chicken in a mixture of salty water (of the correct concentration) to which seasonings and spices have been added. The flavors will be absorbed into the flesh as the structure of the meat is changed. After brining chicken, the meat fibers hold moisture more effectively.

Dry the skin well after brining. Then peel the skin off and put dry chicken rub seasoning directly on the meat. Place the skin back on, over the seasoned flesh before placing the chicken in the smoker. The chicken will be more flavorful when the seasoning is placed directly on the meat.

Operate your smoker at a hotter than normal temperature when cooking smoked chicken recipes with the skin on. The skin ends up nice and crispy, and the taste is just as good as lower temperature smoking provides. Skinless chicken can be smoked hot or at lower smoker temperatures.


Smoked Chicken Recipes

Smoked Chicken Brine
Chicken brine is a magical liquid that transforms chicken into moist, flavorful eating. Learn how it's made, and get the basic chicken brine recipe here.

Smoked Chicken Breast
The brine has onion powder and curry, and when those flavors become intertwined with the taste of hickory smoke, you've got good eatin'! This one is for chicken breasts, but thighs can be substituted.

Apple Smoked Chicken
Skinless chicken breasts are marinated in an apple juice brine. Smoked at 225�F, the white meat is moist and tender. Chilled and sliced, it's great for sandwiches.

Smoked Chicken Breast
A whole chicken is seasoned with a flavorful smoked chicken rub, then smoked hot to produce a crispy skin atop that juicy meat.

Smoked Chicken Thighs
Three pounds of chicken thighs are brined, then seasoned with an easy chicken dry rub. Smoke these until they are well done. Best when the meat literally falls off the bone.

Smoked Chicken Wings
After trimming off the tips and separating the remaining sections, the chicken wings are dusted with a hot and spicy seasoning, then smoked to perfection. Dip these in ranch dressing.

Tea Smoked Chicken

This is the big smoker variation of an Asian classic. The smoke from the tea leaves add a distinct flavor to the chicken that is fantastic.

Prep Time: 15 minutes

Cook Time: 3 hours

Ingredients:

  • 1 2-2 1/2 pound chicken
  • 1/2 cup china black tea leaves
  • 2 tablespoons brown sugar, packed
  • 2 tablespoons rice wine
  • 2 scallions
  • 1 tablespoon fresh ginger root peeled and minced
  • 2 teaspoons salt
  • 1 1/2 teaspoons Szechwan peppercorns, crushed
  • Sesame oil








Preparation:

Combine wine, salt, brown sugar, and peppercorns in a large bowl. Cut scallions into 2 inch long pieces and flatten with the side of a cleaver. Add scallions and ginger root to bowl. Place chicken in bowl and rub the mixture all over the chicken inside and out. Let marinate in the refrigerator overnight. Prepare smoker. Remove chicken from marinade, placing scallions and ginger root inside. When the smoker is up to temperature (about 250 degrees F.) place chicken inside and place 1/4 of the tea leaves on the embers. Let smoke. Add tea leave 1/4 at a time every hour. Remove chicken from the smoker when a thermometer in the thickest part of the chicken breast reads 170 degrees. Brush the surface of the chicken with sesame oil cut into serving pieces and serve.

Meet Little Hawk 2-lol

Well we got "Little Hawk 2" all dressed in his attire-lol-He looks really cool-we just need to find a wig and a beard and he will look like a real mountainman.
All of his clothes and accessories were handmade by Larry when he was in his 20's I also took a photo of items made for us by our Seminole Native American friend, and of Larry's blackpowder hunting gear, I also hung a hand made leather rope we picked up with that gear.

Still gorgoeus weather here in the ozarks, hope your weather is great too-Enjoy!!

This weather reminds me; when as a kid we went to our grandparent's farm and helped to rake all the leaves and tree limbs into a big pile. Then Grandpa would light a fire and we enjoyed cooking hot dogs on a stick, marshmallows and hot cocoa.-Good memories!
