How to Prepare Fresh Pie Pumpkins for Baking

The fresh pie pumpkins seem to be plentiful here. I don't remember seeing them before in a wal mart or regular grocery store, but ours had some really nice ones. So I bought one, and Sandy says she got one at a farmers market and already has hers prepared and in the freezer.

I love them, if I had a bunch I would get out the pressure canner, but will freeze instead.
